Grilling is a delicious way to prepare food and there’s nothing quite like the smoky, char-grilled flavor that comes with it.

But in order to achieve this flavor, and also to ensure your grill grates and griddle last for years to come, you must season your grill correctly, and this is particularly important when your grill is new out of the shop. Seasoning your grill will not only improve the taste of your food but will help protect your equipment.

How to season your grill

When done correctly, the oils used for seasoning your grill will create a protective layer over the metal that helps prevent corrosion, and therefore protecting it from rust and other damage.

The first step is to make sure your grill is clean and free of any food residue or buildup. You can do this by scrubbing the grates with a stiff brush and warm soapy water. Once the surface is dry and thoroughly clean, you can begin to season your grill.

The next step is to apply a thin layer of cooking oil or melted lard to the grates. You can use any type of cooking oil for this, but some popular choices include vegetable and coconut oils. You can use olive oil however it doesn't have a particularly high smoke point so isn't the best.

Spread the oil carefully over the metal with a clean cloth and make sure to get into all the nooks and crannies. Once you’ve finished, allow the oil to dry before proceeding.

Finally, it’s time to heat up your grill! Turn on the grill and let it preheat for at least 15 minutes. This will help set the oils in place and create a protective layer over the metal. If your grill is new, this will have burnt off anything you won't want on your food when you have your first cook.

When you’re finished, turn off the grill and let it cool before wiping away any excess oil with a paper towel.  Then, using a paper towel, apply another thin layer of oil over the cooking surface of your grill grates and griddle.
